“420J2 Steel: Blade made from 420J2 steel. Achieves a hardness between 52 and 53 HRC. Affordable and efficient, with good edge retention.
Knives made from 420J2 steel are dishwasher safe.
420J2 (also known as 3Cr13):
3 (Carbon content): 0.03%. Carbon is important for the hardness of the blade and therefore the sharpness.
Cr (Chromium): Provides high corrosion resistance, very complementary to stainless steel.
